Peel, core and chop apples into medium sized pieces. Immeditely toss in the lemon juice.
¾ kg apples, ½ tablespoon fresh lemon juice
Combine with water, spices, salt and brown sugar in a medium sized pot and bring to a boil.
2 tablespoon brown sugar, 1 cinnamon stick, ¼ teaspoon ground cardamom, 1 pinch salt, 100 ml water
Once boiling, stir, cover with a lid, and cook on medium for 10 minutes, stirring occasionally.
Remove from heat and puree to your liking. I use my favorite ever immersion blender and I like some chunks, so only pureed about half of my apples. Add vanilla and stir.
½ teaspoon pure vanilla extract
Serve warm or cold. Some of my favorite German recipes using apple sauce are my Kartoffelpuffer (German potato pancakes) and quark pancakes.
